Happy Monday! How are you doing? I can’t believe we’re in September now, and I’m back at work as of today š ah well, the routine and structure will do us all good, I’m sure. Monday means another meal plan post though šĀ which just goes through what weāre eating this week so keep our food spends under budget. I have definitely honed my skills in this area for a long time now ā and have evenĀ written a course about it hereĀ ā so we have very little food waste and our meal plans are cheap and tasty!
This weekās meal plan looks like this:
Monday ā slow cooker chilli and rice
Tuesday ā bacon and pea risotto
Wednesday ā filled pasta and sauce
Thursday ā lasagne and salad
Friday ā pesto pasta
Saturday ā jacket potatoes with beans and cheese
I do our food shop on a Sunday so I havenāt thought about what weāll have next weekend! But Iām looking forward to the meals this week. Both boys will eat the same as us all week as well which helps. I love it when we can all eat the same meals togetherĀ Ā plus it makes it a lot easier as I only have to think about one meal rather than different things. I am trying to have some meals during the week which are meat free, which is also reducing our spends and hopefully helping a little.
For my lunches this week there are two options. When I’m at work I’m going to take some chicken salad and some fruit. At home it’ll be a sandwich or cheese on toast, as the norm. The boys usually have a sandwich of some description with fruit and yogurt for afters. Ā Breakfast in our house is just cereal; either wheetabix or shreddies with banana. Goes down well with everyone and fairly healthy + cheap!

Part of our planning and budget for food means that some items are used from our stockpile every week. This is so the food we already have in the cupboards is used regularly and rotated so nothing goes to waste, but itās also a good habit to get in to so that if we cannot get to the shops for whatever reason, I can make meals from what we already have in the cupboards. Using a combination of fresh and frozen food really keeps our grocery budget down. For the risotto we already have everything we needed apart from the bacon, so that was a low cost, stockpile meal this week. The pesto pasta is also just made from things we have in too and the boys absolutely love it. Such an easy meal which I know will go down well!

Your meals sound very tasty but as I am trying to lose weight and following a low carb plan it wouldn’t work for me – although I do envy you that lovely pasta.
I am trying to eat through proteins in my freezer – this week that will be a pork chop one night, a NY strip steak another and some ground pork another, The chop will be served with hot veg – the steak with a huge salad and the ground pork will be part of a zucchini (courgette) bake. I’m eating out Tuesday night because of a meeting after work and other days will be hard boiled eggs and tuna salad (from the pantry) – both served with salad.
Not terribly interesting but I am thinking about making a pot of soup later in the week. The weather is starting to cool and we will be down to around 17/18C by the end of the week (after a summer of around 30C with high humidity). It was cool and rainy after church yesterday so a few of us went to a Chinese restaurant for Hot & Sour soup and dumplings (just a couple) – the soup was delicious!
I don’t usually eat breakfast but rather have “brunch” – usually yogurt or cottage cheese with fruit – occasionally some eggs with veg or a couple of pieces of bacon.
It’s Labour Day today so a day off – I am going to prep a few things for the week ahead later this afternoon (off to the Art Gallery this morning).
