Hello Monday! Another new week ahead. Alfie has a full week at primary school this week – I do hope it goes ok – so we’re firmly back into the routine now. It’s quite nice in some ways, though I am already missing all the time together. It seems such a long time until October half term!
Monday means another meal plan post though which just goes through what we’re eating this week so keep our food spends under budget. I have definitely honed my skills in this area for a long time now – and have even written a course about it here – so we have very little food waste and our meal plans are cheap and tasty 🙂
This week’s meal plan looks like this:
Monday – at the in-laws
Tuesday – filled pasta and sauce
Wednesday – shepherds pie
Thursday – pesto pasta with garlic mushrooms
Friday – fish fingers, chips and beans
Saturday – jacket potatoes with beans and cheese
I do our food shop on a Sunday so I haven’t thought about what we’ll have next weekend! But I’m looking forward to the meals this week. Both boys will eat the same as us all week as well which helps. I love it when we can all eat the same meals together plus it makes it a lot easier as I only have to think about one meal rather than different things. I am trying to have some meals during the week which are meat free, which is also reducing our spends and hopefully helping a little. I am even looking forward to fish fingers on a Friday! Nothing like a freezer meal at the end of the week 😉
For my lunches this week there are two options. When I’m at work I’m going to take some chicken salad and some fruit. I’ve also bought some cheap quavers to have as well. At home it’ll be a sandwich or cheese on toast, as the norm. Alfie will have school dinners (which he seems to be enjoying, phew!) and Charlie usually has a sandwich of some description with fruit and yogurt for afters. Breakfast in our house is just cereal; either wheetabix or shreddies with banana. Goes down well with everyone and fairly healthy + cheap!

Part of our planning and budget for food means that some items are used from our stockpile every week. This is so the food we already have in the cupboards is used regularly and rotated so nothing goes to waste, but it’s also a good habit to get in to so that if we cannot get to the shops for whatever reason, I can make meals from what we already have in the cupboards. Using a combination of fresh and frozen food really keeps our grocery budget down. The pesto pasta is also just made from things we have in too and the boys absolutely love it. Such an easy meal which I know will go down well! I do need to build up our stockpile a bit more though; slowly but surely. I like having things to hand and I don’t like having empty cupboards.

It is Monday afternoon here and I haven’t planned yet. So this will be done on the fly.
Tonight is soy sauce chicken with rice and salad vegetables
Tuesday will be a spinach quiche
Wednesday kedgeree so tonight I am making double rice.
Thursday will be something out of the left over chicken from tonight
Friday fish and chips made at home
Saturday casserole from the beef in the stockpile
Sunday will probably be a pie made from the stew.
I have leftover risotto and potato and leek soup in the fridge for lunches. My breakfast is always blueberries and oats. Mum has a variety of things and it is very dependent on the day.
