Pre-heat your oven to 180º/160º fan/350f. Line a 2 lb loaf tin with baking parchment.
Ingredients:
– 140 g self-raising flour
– 140g caster sugar
– 140g salted butter
– 2 large eggs
– 1 tsp baking powder
– 1 heaped tbsp smooth peanut butter
– 2 ripe bananas, mashed
Method:
1. Firstly, cream the peanut butter butter and sugar until light and fluffy.
2. Beat in the eggs, one at a time. Then sieve the flour and baking powder in.
3. Fold in the mashed bananas, gently,
4. Pour the mixture into a loaf tin and cook for approx. 50 minutes
5. Leave to cool in the tin, if you can!
That’s it! Very straight forward and so tasty. Serve in slices and, paired with a cup of tea, is the perfect afternoon treat. As is my lemon drizzle cake, if you fancy trying something else either way, a making a cake is always going to make you feel better
it’s also a great one to make with children, to get them involved with baking! Mine argue over who gets to lick the spoon and who gets to lick the bowl!
