Having a slow cooker is such an easy way to create delicious food! Especially when you’re busy; you can set it going on a morning and then come home to some lovely food all ready for you. We use our slow cooker a lot, particularly in the colder months. You can do cheaper cuts of meat in the slow cooker too, which is a bonus. Plus, it doesn’t cost much to run all day. A good thing all round! I have a whole here dedicated to why everyone should have a slow cooker.
Today I thought I would share with you one of our favourite slow cooker meals – chilli con carne. This was shared at a Slimming World group a while back and I have made it this way ever since! Both boys love it this way, so I’ll keep it for now. It doesn’t work out too expensive either, which is good. We normally have ours with rice, but it’s great in a wrap with some soured cream, or over tortilla chips for nachos. I normally take some leftovers the lunch the next day too as it tastes just as good heated up the next day.
This is also a good budget one, as it may contain things in your stockpile. Or, if you don’t have any of the ingredients to hand, they’re fairly cheap to buy. This is a regular on our meal plan.
You will need (to serve 4):
- 1 onion, diced
- 1 green pepper, diced
- 6 large mushrooms, diced
- 1 stick of celery, diced
- 1-2 teaspoons of chilli powder (depends on how spicy you like it!)
- 250g mince
- 1 tin of Heinz beans (the mix of 5)
- 1 tbsp tomato puree
Method:
- Add all the chopped veg, mince and beans to your slow cooker.
- Fill the empty bean tin up with water and add that to the slow cooker.
- Stir, then add the chilli powder and tomato puree.
- Give it a good mix, so everything is evenly combined.
- Leave on low all day!
- Serve with rice, cooked as instructed.
It is so simple! And there’s nothing better than coming home to tea (almost) already made. This slow cooker chilli con carne recipe is so good for a week night when everything seems to be a rush. I prep the veg the night before too and leave it in a bowl in the fridge, and then just pour it into the slow cooker in the morning. Saves even more time on a morning when everyone is in a rush!
