This is also a good budget one, as it may contain things in your stockpile. Or, if you don’t have any of the ingredients to hand, they’re fairly cheap to buy. This is a regular on our meal plan.
You will need (to serve 4):
- 250g tagliatelle
- 150ml single cream
- 120g smoked salmon (I get the trimmings which are cheaper)
- 1/2 tsp dried dill
- pinch chilli flakes (optional)
Method:
- Add the tagliatelle to a pan of boiling water. Cook for 12 (ish) minutes.
- Heat the single cream in a small sauce pan on low
- Shred the smoked salmon (the trimmings are usually small enough)
- Add smoked salmon to the warmed cream, reserving a tiny bit for topping.
- Add the dried dill to the cream mixture, along with the chilli if using.
- Drain pasta and put back in pan.
- Pour over the cream/salmon mixture over the tagliatelle and stir well.
- Divide between plates and put remaining salmon on top.
This is so simple! I love simple recipes, particularly on a week night when it always seems to be a bit of a rush to get tea on the table in time. If I’m giving to the boys I don’t add the chilli flakes in; if it’s just two adults then I do. That bit is entirely optional 🙂
